| The dome of my 47" pompeii-oven has a interior height of nearly 28". It should be a tuscan but the dome is looking a little bit more than an egg Is heat reflecting enough to make good pizza? |

| Hi Dennis, It's probably a little higher than you might have wanted, but I am sure the oven will cook very well. Take you time curing, bringing it up to heat slowly, and once you have it fully heated, it will be fine. This is a commercial oven, right? I think it will help that it is fired all the time, and practically speaking, the higher dome should provide a cushion that holds heat and makes the oven efficient with wood. Let us know how it goes.
