| -------------------------------------------------------------------------------- James: I have 8 thermocouples installed in the oven. Incredibly piece of information when first using the oven. Steps up the learn curve. Nowadays I use just 2 of these: the center hearth thermocouple to read the hearth temperature when baking pizzas and the ambient temperature when waiting the temperature down to bake bread and so. | Luis, I could never forget your thermocouples, or the wonderful termperature heat up and fall off curves you have been able to produce. As you say, that would definitely accelerate the learning curve. Where are the two thermocouple that you are still using set? The center of the cooking floor about 1 1/2" down from the inside of the oven? Also, where is the thermocouple that checks ambient temperatures? Thanks for you input on this. | I answered with two digital but they could be analog too...I think it is perfect to be able to accurately gauge the temperature of the masonry in both ceiling and floor...thanks Dutch |
