Made my dough tonight and as I roll out balls I see the dough tearing
I made james recipe for dough also watched the how2heros video where they make the dough with a biga. I followed the receipe to the T and when I go to put my dough into balls, while folding I see the dough tearing. My dough never seems elastic or strechable. I used Caputo OO flour, followed everything, is it the water?, I just want a great receipe for pizza dough. I swear I am at the verge of going and getting a job for a week at a brick oven pizza shop in so cal just to see how the dough is made, internship perhaps!. Anyone have any suggestions. Thanks, Kevin
