        from

Active Yeast vs. Instant Yeast | The Fresh Loaf

use 25% less instant yeast when substituting for active dry.

Personally with my bread making I tend to watch the dough rather than measure time.

        Experiment cook enjoy

there are many strains of beer and wine yeast.

is it worth mucking about to see if it makes a difference?

Well I suppose for some people mucking around id 80% of the fun
