I'm Peter Reinhart! Ask Me Anything! Monday, February 15, 2016 7:00-8:00 pm EST

To kick off our AMA feature, we have invited author, chef and master bread maker and host of Pizza Quest, Peter Reinhart, to be our first host! Peter will be in the Forum on Monday, February 15th, from 7:00 - 8:00 pm EST. If you are unable to be online during the live session, you can post your questions in the sticky post. Peter will answer those questions during the live session on February 15th. You can view Peter's answers to your questions as well as what happened during the live session in the session thread.

Ask Me Anything New Forum Feature

You will notice a new forum at the top of the main page called, "Ask Me Anything". This forum will be used for live one hour "Ask Me Anything" (AMA) sessions hosted by people who are knowledgeable in different areas pertaining to wood fired ovens. How it works:
- Each AMA will have a "sticky" thread where the community can post questions they would like answered during the live session. This will allow everyone to participate even if you can't be online for the live session. These questions will not be answered by the host until the live AMA; if you need an answer quickly, you should post it in the appropriate Forum area for the community to respond.
- Another thread will be posted for the live AMA. Registered users who are logged in during the live session can interact with the host by asking questions and receiving responses.
- The live thread will remain in the AMA forum to view after the session.

We hope you enjoy this new feature! Please let us know if there is a topic that you'd like to have as an AMA and we'll look for a host!

Dome Installation Video - Casa / Premio / Modena

    hi guys! has any one used the one part portland cement one part hydrated lime six part sand mix instead of fire resistant cement which can be costly.
    please tell me if you have used it pros,cons!

    That is a regular Type N mortar, with minimal refractory characteristics. That said, I have seen a lot of old fireplaces that were in heavy use and good shape that used it with 3/8" joints.

    For the effort required to build an oven, I would not risk it, though.

      If you're out to save money, I'd stick with the tried and true homebrew mortar.

      Here is the recipe for fire clay mortar, where you measure by volume (use a bucket or shovel to measure):

      1 part portland
      3 parts sand
      1 part lime
      1 part fire clay
      I know fireclay is a little hard to find in the UK, but it's worth the search. It's the only really refractory item in the mix. If mason's suppliers don't have it try pottery supplies. I haven't used the homebrew stuff, but it's said to work better if you get really fine sand.

        HI D,

        I'am a little surprised to see the lime in the mix, I thought that it would burn out. I have been mixing a fireclay mortar at
        2 parts sand
        1 part port
        1 part fireclay
        I would have to admit that the lime would make it easier to lay, If it had no ill effects. I learned from an old time brick mason, but that does'nt mean it was correct. any thoughts on this?

          The lime will not deteriorate with heat like the portland cement does over 300C. Use the 3:1:1:1 fine sand,pot cement, lime, fireclay. Be careful with the lime, use a good quality hand barrier cream and or rubber gloves. Hurts like hell in a cut and dries out the skin on your hands otherwise.

            I'm using the home brew for my oven and it spreads and sticks well. I use rubber gloves so no problem with my hands. I bought one bag each of fire clay, portland and lime along with a yard of fine masons sand. Plenty to do the whole oven.
