I'm Peter Reinhart! Ask Me Anything! Monday, February 15, 2016 7:00-8:00 pm EST

To kick off our AMA feature, we have invited author, chef and master bread maker and host of Pizza Quest, Peter Reinhart, to be our first host! Peter will be in the Forum on Monday, February 15th, from 7:00 - 8:00 pm EST. If you are unable to be online during the live session, you can post your questions in the sticky post. Peter will answer those questions during the live session on February 15th. You can view Peter's answers to your questions as well as what happened during the live session in the session thread.

Ask Me Anything New Forum Feature

You will notice a new forum at the top of the main page called, "Ask Me Anything". This forum will be used for live one hour "Ask Me Anything" (AMA) sessions hosted by people who are knowledgeable in different areas pertaining to wood fired ovens. How it works:
- Each AMA will have a "sticky" thread where the community can post questions they would like answered during the live session. This will allow everyone to participate even if you can't be online for the live session. These questions will not be answered by the host until the live AMA; if you need an answer quickly, you should post it in the appropriate Forum area for the community to respond.
- Another thread will be posted for the live AMA. Registered users who are logged in during the live session can interact with the host by asking questions and receiving responses.
- The live thread will remain in the AMA forum to view after the session.

We hope you enjoy this new feature! Please let us know if there is a topic that you'd like to have as an AMA and we'll look for a host!

Dome Installation Video - Casa / Premio / Modena

For many of you who bought a modular oven, you may have asked how we put the domes together when we build them. For those of you considering one of our ovens, we shot a video to make your install easier.

    Anyone ever pour oven floor with Heatcast 40? search "Heatstop" - Product says its good up to 2000 degrees. It would give you a perfectly smooth oven floor and save a lot of time cutting and placing all those floor bricks.HEAT CAST-40 is a medium weight refractory castable product. It is also sometimes used in place of firebrick or it may be cast into special shapes for woodstoves, fireplace hearths, walls, boilers, furnaces, and other high temperature applications???? Any thoughts

    Pouring a slab that large would develop cracks, others Have made a round center casting and 4-6 pie slices around the center circle.

      so you would place a grid system into it - any reinforcmennt?? Any forseeable problems? Do they retain heat as much/ or better than firebrick. This could really save a lot of time

        By the time you make all of your forms I think it will take quite a bit longer. The main reason for doing cartable is the fewer number of seams. It does not take long to cut the bricks, I did it in less than 2 hours. Because most of the cuts are outside cuts they go quickly.

          I cast my oven floor myself and segmented it for ease of lifting and moving the oven. To be honest I would prefer using bricks made from natural products especially as food is going to be prepared on it. See it here http://www.fornobravo.com/forum/21/m...y-16182-2.html

            The materials in castable refractory are essentially the same as a firebrick and there is little difference between them in density and abrasion resistance. I don't think you have a problem.

              The company i deal with here in the UK sell refractory castable however I believe the bricks are natural kaolinic clay similar to the clay used by the fantastic French ovens Le Panyol. Hence the colour difference of bagged castable and the white bricks
