New Forno Bravo Forum Feature

Forno Bravo Forum Community,

You will notice a new forum at the top of the main page called, "Ask Me Anything". This forum will be used for live one hour "Ask Me Anything" (AMA) sessions hosted by people who are knowledgeable in different areas pertaining to wood fired ovens. How it works:
- Each AMA will have a "sticky" thread where the community can post questions they would like answered during the live session. This will allow everyone to participate even if you can't be online for the live session. These questions will not be answered by the host until the live AMA; if you need an answer quickly, you should post it in the appropriate Forum area for the community to respond.
- Another thread will be posted for the live AMA. Registered users who are logged in during the live session can interact with the host by asking questions and receiving responses.
- The live thread will remain in the AMA forum to view after the session.

To kick off our AMA feature, we have invited author, chef and master bread maker and host of Pizza Quest, Peter Reinhart, to be our first host! Peter will be in the Forum on Monday, February 15th, from 7:00 - 8:00 pm EST. If you are unable to be online during the live session, you can post your questions in the sticky post. Peter will answer those questions during the live session on February 15th. You can view Peter's answers to your questions as well as what happened during the live session in the session thread.

We hope you enjoy this new feature! Please let us know if there is a topic that you'd like to have as an AMA and we'll look for a host!

    Is 22 gauge stainless steel thick enough to use for the vent? I had a vent fabricated and it seems thinner than expected. (see photo posted showing comparison of thickness to FB door)

    I cannot say about the guage, but I like the design and I think it is going to do a good job collecting smoke. Are you going to enclose it?

      I plan to enclose it in stucco, unless I hear that there is a lot of concern regarding its longevity. If it is not going to last, then I might try to leave out of the stucco, or have a new thicker one made.

        A few years ago, I was having a driveway cut in to a field, and suddenly, there appeared a shiny metal piece. I thought it had fallen off the grader ( heavy equipment to do the digging). It turns out, there was a hole that someone had used for trash 60 years ago. It was long since forgotten until we stumbled upon it.

        I unfolded this piece of stainless steel and hammered it out a bit. I plan to use it for my chimney cap eventually. It is fairly thin, probably similar to your hood. It is an amazing material. Still durable, shiny after being buried for years.

        That piece will probably outlast your oven.

        This may not be my last wood oven...

          22guage is pretty thin but should be OK provided it is 304 or 316 grade stainless.
          I made mine out of a lower stainless but 16 guage (or 1.6mm thick).
          The only problem that you can expect is the stainless to 'rust' and it will if it gets hot and oxidizes.
          I used to make stainless quick releases for water ski display and delta wing kite flying behind a boat and the 316 stainless always rusted where the metal was heated or oxidizes/welded.
          The oxidised areas need to be 'passivated' or 'pickled' using passivating paste which consists of equal proportions of nitric, sulfuric and hydroflouric acids.
          See how it goes.
          My hood has a little rust on the weld spots but will taked years to penetrate through the metal thickness.

          If you don't succeed the first time, try again and again until you get it right!
