I'm Peter Reinhart! Ask Me Anything! Monday, February 15, 2016 7:00-8:00 pm EST

To kick off our AMA feature, we have invited author, chef and master bread maker and host of Pizza Quest, Peter Reinhart, to be our first host! Peter will be in the Forum on Monday, February 15th, from 7:00 - 8:00 pm EST. If you are unable to be online during the live session, you can post your questions in the sticky post. Peter will answer those questions during the live session on February 15th. You can view Peter's answers to your questions as well as what happened during the live session in the session thread.

Ask Me Anything New Forum Feature

You will notice a new forum at the top of the main page called, "Ask Me Anything". This forum will be used for live one hour "Ask Me Anything" (AMA) sessions hosted by people who are knowledgeable in different areas pertaining to wood fired ovens. How it works:
- Each AMA will have a "sticky" thread where the community can post questions they would like answered during the live session. This will allow everyone to participate even if you can't be online for the live session. These questions will not be answered by the host until the live AMA; if you need an answer quickly, you should post it in the appropriate Forum area for the community to respond.
- Another thread will be posted for the live AMA. Registered users who are logged in during the live session can interact with the host by asking questions and receiving responses.
- The live thread will remain in the AMA forum to view after the session.

We hope you enjoy this new feature! Please let us know if there is a topic that you'd like to have as an AMA and we'll look for a host!

  • Insulating hearth question

    I can't imagine trying to build this without all of the help in this forum. Thank you all. Luckily I read a thread yesterday about the techniques on working with perlite and concrete before I added as much water as I would have the day before.
    My question:
    I have it level with the top of the form but there are spots where the layer is flat and smoothish but others where it is a little like ceiling popcorn. I tried to tamp it down but I guess some spots had more moisture than the others? I have attatched a couple images that show the lighter grays as the smoother spots. Would I adjust for this with a slightly thicker layer of Fireclay/sand to fill in the popcorny spots?

    It looks EXACTLY like mine did. As you spread the fireclay/sand mix it will fill in where it needs to, and glide over the other spots. The important thing is to get a nice level surface to lay the cooking floor on.

      Agreed....mine looked the same, Although I took a slightly different approach to the fireclay/sand mix.
      Since I wasn't using fireclay anywhere else in the project and I was too lazy to make a special trip for just a few lbs, I used a slightly wetter mix of Heastop 50 as a very light skim coat to smooth the perlcrete and then used a 1/8" grooved trowl to apply the same mix to set the hearth bricks on...tapping and leveling as I went. I wouldn't say my hearth is mortared in place, just "glued" enough to hold them in place and level. No adverse effects from this approach that I have found.

          Looks like standard issue vermicrete to me. There should be a bit of slip between you floor and the floor bricks anyway. You could lay a thin coat fireclay sand over it to make it smoother but, it really shouldn't be necessary to do it as an extra step as the fireclay slurry will do it when you lay the floor bricks. Looks like you're doing a fine job! Keep up the good work!
