Cooking surface height vs outer finished counter - Forno Bravo Forum: The Wood-Fired Oven Community

To kick off our AMA feature, we have invited author, chef and master bread maker and host of Pizza Quest, Peter Reinhart, to be our first host! Peter will be in the Forum on Monday, February 15th, from 7:00 - 8:00 pm EST. If you are unable to be online during the live session, you can post your questions in the sticky post. Peter will answer those questions during the live session on February 15th. You can view Peter's answers to your questions as well as what happened during the live session in the session thread.

Ask Me Anything New Forum Feature

You will notice a new forum at the top of the main page called, "Ask Me Anything". This forum will be used for live one hour "Ask Me Anything" (AMA) sessions hosted by people who are knowledgeable in different areas pertaining to wood fired ovens. How it works:
- Each AMA will have a "sticky" thread where the community can post questions they would like answered during the live session. This will allow everyone to participate even if you can't be online for the live session. These questions will not be answered by the host until the live AMA; if you need an answer quickly, you should post it in the appropriate Forum area for the community to respond.
- Another thread will be posted for the live AMA. Registered users who are logged in during the live session can interact with the host by asking questions and receiving responses.
- The live thread will remain in the AMA forum to view after the session.

We hope you enjoy this new feature! Please let us know if there is a topic that you'd like to have as an AMA and we'll look for a host!

    Hi, I intend finishing around my kit oven with a 2inch polished counter top. My question is, should my oven floor be slightly higher than the outside finished counter, ie with a step down, or do people keep these level?

    Your preference. If you have a step it will deter some water from getting inside. If it is the same level it may makes it easier to slide things in and out. Mine is raised and I have no issues with using it.

      You may want to slope the counter slightly so that water has a natural tendency to flow away from the entrance/interior.

      My WFO has a granite counter which is essentially at the same level where it joins the entrance/interior bricks yet slopes away at an angle about 1/4 inch in two feet. With the join at the same height, sliding a roaster in or out becomes no problem. This slope is not enough to cause problems with standing something upright like a glass of wine or a long necked beer yet if that beer were to spill the beer would flow away from the entrance.

        My first hearth was raised and was a pain in the bum, my new oven is all the same level and is a shear joy to use compared.

          My hearth is raised and I don't have an issue with it. Could be that is because it is the extent of my experience but anyway, that is my contribution. Hope it is of some use other than making the score even.

            Thanks guys, a mixed bag! I think I'll go for slightly raised with counter level at entrance and sloping away as Wiley described.

              Just an update on this, I've removed the form for my counter and I'm lowering it because if I make a ball$ of the countertop I'll have enough cover to tile it!

                A little late to the party, but mine is level, and the outside counter slopes slightly away to drain water when it rains. No issues whatsoever and much easier for me to get food in and out.
