I'm Peter Reinhart! Ask Me Anything! Monday, February 15, 2016 7:00-8:00 pm EST

To kick off our AMA feature, we have invited author, chef and master bread maker and host of Pizza Quest, Peter Reinhart, to be our first host! Peter will be in the Forum on Monday, February 15th, from 7:00 - 8:00 pm EST. If you are unable to be online during the live session, you can post your questions in the sticky post. Peter will answer those questions during the live session on February 15th. You can view Peter's answers to your questions as well as what happened during the live session in the session thread.

Ask Me Anything New Forum Feature

You will notice a new forum at the top of the main page called, "Ask Me Anything". This forum will be used for live one hour "Ask Me Anything" (AMA) sessions hosted by people who are knowledgeable in different areas pertaining to wood fired ovens. How it works:
- Each AMA will have a "sticky" thread where the community can post questions they would like answered during the live session. This will allow everyone to participate even if you can't be online for the live session. These questions will not be answered by the host until the live AMA; if you need an answer quickly, you should post it in the appropriate Forum area for the community to respond.
- Another thread will be posted for the live AMA. Registered users who are logged in during the live session can interact with the host by asking questions and receiving responses.
- The live thread will remain in the AMA forum to view after the session.

We hope you enjoy this new feature! Please let us know if there is a topic that you'd like to have as an AMA and we'll look for a host!

  • Flue sizing

    Hi all, I am building a 36 inch pizza oven and trying to decide what is the best flue size to use. No doubt it has been asked before, but I was wondering if anyone can offer any advice from experience as to whether a six inch or an eight inch flue works best for a 36 inch oven. Also, is there a maximum or minimum height to work efficiently? Any help would be appreciated. Regards Dave.

    4 inch , any obstacles nearby may cause low pressure areas

      The smoke will find the easiest way out which is the door.

      A venturi only really works on a closed system without the larger escape hole for the smoke.

        In that case any Rumford fire would smoke like a dragon

        Principles of venturi according a fire size the flue should draw especially if tall enough.

        Try the 8 then

          Fair enough, point taken.
          But in building a fireplace and chimney there is a slow gather of the brickwork above the fire box to coax the smoke to go straight up, which it wants to do anyway due to heat and the expanding volume of the gases.

          In an wood fired oven situation the smoke is making a rapid exit for the door, you have to then persuade the smoke to do a right angled turn and go up the flue, making the flue smaller will inhibit this.

            6 inch is perfect for my 36 inch oven.
            What makes the smoke move up the flue is the draw. Heat rises so it you can create a draw. The longer the chimney, the stronger the draw.

            A draw can be strong enough to move smoke sideways and even downward.
            Rocket stoves have flames and smoke move that move sideways and down.

            I use stackable 6 inch hvac for my chimney. The longer I make that chimney, the stronger the draw.

              Conventional draw characteristics change dramatically with outside fire chambers....which is why you can't over flue a wood oven or outdoor fireplace.

                I have a 6 inch flue on my 32 inch oven and it works fantastically. After the oven (and flue) heat up I get no visible smoke out of the front. I suspect the 6 inch flue would work just as well for your slightly larger 36 inch oven. Make sure you do not constrict the air flow prior to it entering the flue.

                  So if I am using a 20cm or 8" flue on a 1000mm oven I should be okay? Does it have to be double walled it is outside completely?

                    I think the double wall is necessary just for safety incase the flue passes through a building structure. If the oven is located outside and the flue does not pass through a building structure, then a double flue is unnecessary.
