To kick off our AMA feature, we have invited author, chef and master bread maker and host of Pizza Quest, Peter Reinhart, to be our first host! Peter will be in the Forum on Monday, February 15th, from 7:00 - 8:00 pm EST. If you are unable to be online during the live session, you can post your questions in the sticky post. Peter will answer those questions during the live session on February 15th. You can view Peter's answers to your questions as well as what happened during the live session in the session thread.

Ask Me Anything New Forum Feature

You will notice a new forum at the top of the main page called, "Ask Me Anything". This forum will be used for live one hour "Ask Me Anything" (AMA) sessions hosted by people who are knowledgeable in different areas pertaining to wood fired ovens. How it works:
- Each AMA will have a "sticky" thread where the community can post questions they would like answered during the live session. This will allow everyone to participate even if you can't be online for the live session. These questions will not be answered by the host until the live AMA; if you need an answer quickly, you should post it in the appropriate Forum area for the community to respond.
- Another thread will be posted for the live AMA. Registered users who are logged in during the live session can interact with the host by asking questions and receiving responses.
- The live thread will remain in the AMA forum to view after the session.

We hope you enjoy this new feature! Please let us know if there is a topic that you'd like to have as an AMA and we'll look for a host!

  • Testing mortar

    I have bags of alsey flue set mortar (#100316) that have been setting for about two years in a dry shed. Is there a good test procedure for testing the mortar to assure that it is still "good to use." Temps here are in the 70's and it just seems that it is taking a long time for the mortar to set. Not sure as to whether there may be a problem or not.

    Also should I spray the dome with water as I am building, or just leave the mortar set? Thanks for any help.

    I don't know that product, but it is probably a calcium aluminate based one which have shorter shelf life (usually 12. Months) if it were mine I'd ere on the safe side and ditch it, but you could try mixing a sample and see what happens.

      It is a Hygroscopic material, so unless it was kept in an airtight container, it has already fired off, although at a microscopic level. It may react a little with the addition of water, but it does have a shelf life and yours has probably exceeded it.

      Mix some, make a 1x1x6 inch cube and let it cure for a week. If you can break it between your fingers, discard it.

        Thanks for the input. This stuff is 3 years old! I did mix a sample in a small plastic bottle and it set up pretty quickly. I will leave it for a week as suggested.
        In the meanwhile, I contacted Alsey in St. Louis and spoke to their tech department. Was told that as long as the flue set hadn't hardened in the bags and was flowing smoothly, there should be no problems. According to the tech, flue set doesn't have a shelf life problem as long as it has not been exposed to wet conditions. The tech also said that the material takes a week to ten days to harden and cautioned against retempering the material with additional water.

          He is technically correct, there is no shelf life if it is not exposed to moisture.
