Newbie Construction - Ottawa, ON, Canada - Forno Bravo Forum: The Wood-Fired Oven Community



I'm Peter Reinhart! Ask Me Anything! Monday, February 15, 2016 7:00-8:00 pm EST

To kick off our AMA feature, we have invited author, chef and master bread maker and host of Pizza Quest, Peter Reinhart, to be our first host! Peter will be in the Forum on Monday, February 15th, from 7:00 - 8:00 pm EST. If you are unable to be online during the live session, you can post your questions in the sticky post. Peter will answer those questions during the live session on February 15th. You can view Peter's answers to your questions as well as what happened during the live session in the session thread.

Ask Me Anything New Forum Feature

You will notice a new forum at the top of the main page called, "Ask Me Anything". This forum will be used for live one hour "Ask Me Anything" (AMA) sessions hosted by people who are knowledgeable in different areas pertaining to wood fired ovens. How it works:
- Each AMA will have a "sticky" thread where the community can post questions they would like answered during the live session. This will allow everyone to participate even if you can't be online for the live session. These questions will not be answered by the host until the live AMA; if you need an answer quickly, you should post it in the appropriate Forum area for the community to respond.
- Another thread will be posted for the live AMA. Registered users who are logged in during the live session can interact with the host by asking questions and receiving responses.
- The live thread will remain in the AMA forum to view after the session.

We hope you enjoy this new feature! Please let us know if there is a topic that you'd like to have as an AMA and we'll look for a host!

    After years of contemplation we finally poured the foundation for a 42Ē Pompeii oven last weekend. The foundation blocks are now in place and next weekend weíll tackle the hearth. Seems thereís a wealth of information on this forum and Iíll be putting it to good use. Iím amazed at the skill, artistry, knowledge, expertise and helpfulness displayed here.
    Unfortunately, we left it too late for our oven to be ready in time for Canadian Thanksgiving (next Monday) but completion could coincide with American Thanksgiving Ė if so Iíll celebrate twice this year!
    This is my first posting - Iíll be back with photos sometime soon.

    Welcome. And, as you said, there is a wealth of information here.

    I served pizza appetizers for Thanksgiving last year and will do again this year. I also think that I'll try a turkey in the WFO this year.

      Thanks for the welcome.
      Right now, with so much still to do, I'll be happy if it just gets done, stays standing and ends up looking reasonably good - the actual cooking part will be a bonus!

        I'm north and east of Toronto. The welcomes here, mine included, are quite genuine. Keep the faith; you'll get there.

          Hi Jim, and thanks.

          I hope I didnít sound discouraged - Iíll get there, as you say, but patience isnít a strong suit of mine. Needed, I know, to get it (oven) right, so Iím gritting my teeth in grudging acceptance of the fact that I'll have to wait till Friday to move ahead. I think I have managed to attach a thumbnail of the progress so far.

          I actually have a pretty good grasp of where youíre located Ė less than an hour west of one of the Ontarioís best cheese factories - Ivanhoe (shameless plug - family ties in the area and I really enjoy their aged cheddar).

          I had a look at your Mary G.ís site and am really impressed by all the breads you bake. Perhaps Iíll have the pleasure of stopping in for a loaf some day. Baking bread is an even bigger draw for me than making pizza. And a neighbour has already put in her request for bagels!

            Hey, I like your two-hole stand. That's a good idea! It's impossible to get to the back of the standard design wood storage.
