Some while ago there was much discussion on the effectiveness of heavy duty hook mixers. I have a 30 litre Hobart style machine but have been using my Kitchenaid as a matter of convenience - but today I cranked up the big beast and I was amazed at the difference in dough quality. I made about 2 kgs of dough as I had some friends around and the big mixer produced a really smooth, silky dough. Definitely worth using a decent mixer to produce a top quality pizza dough....
