Why are there three different Modena packages?
The Modena Series ovens are available in three configurations: fully assembled, knocked down and the core oven components. Each package is desgined for a specific restaurant requirement. The fully assembled Modena oven is a mainstream alternative for restaurants who have access to roll the oven into place using a forklift or pallet jack. The fully assembled oven is ready to go, where the restaurant only needs to hook up the chimney, and the gas and electricity for the gas/wood combo version, and light the oven.
Still, the Modena ovens range between 59" - 71" wide, and are too large to fit through a standard doorway. For restaurant owners who want a complete oven, but have limited access, we provide the Modena ovens in knocked-down kit form. The kit contains everything required to assemble the Modean oven, where each piece can be carried through a standard doorway.
For restaurants who want a fully custom installation, we provide the Modena core oven. This package contains the refractory components of the oven chamber, and allows the restaurant designer to specify a custom oven stand and enclosure.
What are the differences between the Modena Gas and Wood Series ovens?
The Modena G and Modena W Series are based on the same oven. The only difference between the two is that the Modena G Series contains the gas burner, electronic control panel and burner ash guard.
Can the Modena G Series be used either as gas-only or as gas/wood combo?
Yes. Each Modena G Series oven can be used either as gas-only, a combination of gas and wood, or even wood only.
Can a Modena W oven be converted to use the gas burner?
Yes. The Modena W oven stand has the pre-driled locations to mount the Modena burner and electronic controls, and the oven cooking floor can be modified to accommodate the burner.
How is the Modena G burner different from other pizza oven burners?
The Modena G burner is unique because it is the only gas burner to accurately replicate the heat and flame characteristics of a wood fire. The Modena G burner shoots a wide cone of flame into the oven dome that reflects dwon onto the cooking floor, where it both bakes pizzas and other food and recharges the cooking floor. This is the same way the wood-fired Modena ovens operate. Other gas-fired pizza ovens use a low flame burner that is not strong enough to keep the oven dome and floor hot during peak cooking periods. In fact, some gas-fired pizza ovens use expensive and inefficient infrared heating elements under the cooking floor because the oven burner cannot keep up with the demands of restaurant cooking.
Why does the Modena G burner have two operating modes?
The Modena G burner operates in two modes: normal and burst. The burst mode is used during oven heat up and during high throughput cooking periods, where the oven temperature falls below a user selected tolerance. The burst mode uses two burner outputs simultaneously to deliver maximum heat. During normal operation, the Modena burner uses a single burner output to offer efficient and cost-effective operation.
Are the Modena ovens listed for commercial operation in the US?
Yes. The Modena Series ovens are listed to UL737, UL2162, NSF/ANSI-4 and ANSI Z83b.
