Fresh and dried herbs are a wonderful addition to your pizza, flat bread and focaccia. Sprinkle some dried oregano on your flat bread, knead rosemary into your focaccia, shower your Margarita pizza with fresh basil, and stand your roasting chicken over a bed of fragrant herb d' Provence.
We would recommend tossing your fresh herbs on anything you cook in your brick oven after it is finished cooking -- otherwise it will burn. Grab a bunch of basil leaves and cut them into slivers using your round pizza cutter.
It isn't really an herb, but areola is a great addition to many pizzas and flat breads, and goes really well with grilled onions and cheeses. |
