Pizza Stone Bread | Primary Fermentation |
Start your primary fermentation on the morning of the day when you want your bread. The general idea is to take your pre-ferment, and add the ingredients you need to complete your recipe. For example, if the Ciabatta recipe calls for:
- 3 cups of flour
- 1 1/4 cups of water
- 1 TBS of olive oil
- 2 tsp salt
- 2 tsp yeast
Add the following to our pre-fermented dough to finish the recipe:
- 1 cup of flour
- 1/8 cup of water
- oil
- salt
- 1 1/2 tsp yeast
Again, hit the dough button your bread machine, and leave. It will run for another 90 minutes, and make a nice, light, sticky dough. When your bread cycle you will be done with your primary fermentation.
At this point you have invested four minutes in your world-class Pizza Stone Ciabatta.
Time to move on to Degassing your dough.
